Breakfast Casserole

Last night we had breakfast for supper. Some of my friends think it is strange, but the kids love it. Two of my boys didn't come over last night so I didn't make everything I had planned. No cinnamon rolls and no hashbrowns:( But I did make biscuits and sausage gravy and a breakfast casserole.

I first had this at my dads house a few years ago. So this year I asked my step-mom for the recipe. She had 4 different ones so I copied down 2 of them and brought them home. I decided to use a little from each recipe and make my own version. If HB liked mushrooms I would have added some to make it just a little tastier. Everyone liked it and I will be making it more often. Maybe even for breakfast someday. By the way the leftovers make great breakfast burritos.

1/4 cup green onion, chopped
1 cup diced ham
10 slices bacon, crumbled
1 cup shredded cheese- any kind
8 eggs
1 can evaporated milk
1 cup milk
1/8 teaspoon salt
1/8 teaspoon pepper
fresh parsley, chopped

Sprinkle onion, ham, bacon, and cheese into a 9x13 baking dish. Combine remaining ingredients and beat to mix. Pour over mixture already in dish. Bake at 325 degrees for about an hour. Casserole is done when knife inserted comes out clean. Sprinkle parsley on top and serve.
