Raw Apple Cake

I love apple cake, I posted my grandma's recipe last year. Now it's time for My Step-mother's recipe. This recipe has nuts (Grandma couldn't eat nuts). Whenever she makes this cake I eat too much:) I really like to eat it for breakfast on Christmas morning. Better than a donut.


Mix well ( I use electric mixer)
1 c margarine
2 c sugar

2 eggs
1 c water (mix well again 1 or 2 minutes)

1/2 tsp salt
2 tsp cinnamon or 3 tsp pumpkin pie spice
3 c flour
2 tsp soda (mix again)

Stir In:
4 c sliced apples

Put in 9 x 13 pan. Before baking top with brown sugar and nuts. (There is no measurement for this, I like quite a bit of it. Probably 1 c brown sugar at least and 1 c nuts. But it is all optional.)

Bake at 325 degree for 1 hour.

Mom's Meatballs

Around here the favorite meal is Spaghetti and Meatballs. My boys won't touch a frozen meatball. And they always tell me that so and so's meatballs weren't as good. I think I have spoiled them. The only thing I do that is all that different is I don't brown the meatballs before cooking them in the sauce. And I don't add pork. I like them better that way. JM is wanting to know how to cook so this recipe is for her:)

1 1/2 pounds lean ground beef
1 package crackers, crushed
1 egg
1/4 cup grated Parmesan cheese
1 teaspoon salt
1/4 teaspoon pepper
1 teaspoon Italian seasoning

Mix together with your hands.

Roll meatballs into desired size. (I use a large melon baller to make my meatballs.) Add enough of your favorite sauce to cover meatballs in Dutch oven. Simmer on low heat about 2 hours. Pour on top of pasta or make some meatball sandwiches and enjoy. For spaghetti I also add chunks of Italian sausage with the meatballs.
